Luxury Cayman Villas’ New Head Executive Chef Talks About His Culinary Philosophy

Award winning Chef Vincent Logan was recently joined us as Executive Chef for the new LCV In-Villa Dining Program. Working closely with a local high-end wine boutique, the Tasting Room, one of Chef Vincent’s very first priorities was to introduce a sommelier-selected wine pairing package for all of his dinner menu offerings.

Previously working at one of the world’s finest wineries gave me a unique perspective on cuisine.  I am of the humble opinion that food and wine are simply not complete without each other.

His menus at Luxury Cayman Villas include island classics like grilled wild caught local wahoo, lemon risotto with tarragon, blistered brussell sprouts and tropical salsa. Or try his famous Panzanella Salad (Cayman mixed greens, local seasonal vegetables, toasted French bread, passion fruit vinaigrette and balsamic reduction). He is also considering including some exciting new Asian-inpired local seafood offerings.

I believe in fresh, seasonal ingredients, sustainable foods, organic when possible, and fusing cuisines from all around the world.

With a focus on fresh, local flavors and a drive for perfection, Chef Vincent creates sumptuous dishes and decadent desserts certain to please even the most discerning palate.


From a family of artists, Chef Vincent studied design and architecture before choosing a culinary career and training as a classical French chef. While working at Washington, D.C.’s Mayflower Hotel, he cooked for former presidents Ronald Reagan and George H. Bush. He has cooked for entertainers like Celine Dion, Danny De Vito, Eddie Van Halen, Goldie Hawn, Kurt Russell, and high-rollers from all over the world during his time at the Aladdin Casino in Las Vegas, the Four Seasons Resort at Emerald Bay, Bahamas, and Maui’s Fairmont Ke Lani.
